- 2 tsp. shallots (finely chopped)
- 1/2 lb. morels (fresh, washed and halved lengthwise)
- 1 cup dry white wine
- 2 bunches ramps (around 18 total)
- 2 Tbsp. chicken base
- 2 Tbsp. butter
- 1 lb. veal (scalloppini, cut into about 12 pieces)
