I used panko bread crumbs and really loved this recipe. It also freezes very well. I served it with a small side of pasta, had some red merlot with it and all it missed was an expensive restaurant bill.

This was a terrific meal. Putting the veal in the refrigerator truly kept the breading from coming off the veal. It browned beautifully and had a nice crisp crunch. Will definitely make this again. Served veal with a small of pasta
