Veal Marsala with Radicchio Salad

  • 2 cups beef stock
  • 1/2 cup marsala
  • 1 shallot (finely diced)
  • 1 clove garlic (crushed)
  • 1 tablespoon butter (cold, diced)
  • 2 tablespoons flat leaf parsley (finely chopped)
  • 4 steaks (veal, pounded, about 3.5 oz each)
  • 1/3 cup all-purpose flour (seasoned)
  • 2 tablespoons olive oil
  • salad (Radicchio)
  • 2 heads radicchio leaves (separated)
  • 1/2 bunch arugula
  • 2 lemons (1 juiced, 1 cut into wedges)
  • 1/4 cup olive oil
  • 1/4 teaspoon brown sugar

    Directions

    1. Heat stock, Marsala, shallot and garlic in a pan over medium heat. Simmer for 15 mins, until reduced by one-third. Whisk in butter until melted. Add parsley and season to taste.
    2. Coat veal in seasoned flour, shaking off excess. Heat oil in a frying pan on high. Cook veal for 1-2 mins each side, then pour Marsala sauce over veal.
    3. Combine radicchio, arugula, lemon juice, olive oil and brown sugar in a bowl and season to taste. Serve veal with lemon wedges and salad.
