Description
Enjoy these light and fluffy sweet snacks, reminiscent to clouds not only in taste but also in appearance. These Vanilla and Cinnamon Clouds are made by whipping egg whites until stiff with a bit of stevia, to which is added vanilla extract. Piped into the shape of your choosing, these sweet clouds are then sprinkled with cinnamon and baked until lightly golden brown. Try these Vanilla and Cinnamon Clouds as an accompaniment to tea or coffee.

- 3 egg whites
- 1 Tbsp. stevia powder (sweetener)
- 1/2 Tbsp. vanilla extract
- canela (for sprinkling)

Directions
- Preheat oven to 140 degrees Celsius.
- Whisk the egg whites with the sweetener until they stiffen, then add the vanilla extract, and stir softly so as not to break the whites.
- Place the egg whites in a pastry bag, or in a transparent plastic bag with the tip cut off. On a baking tray lined with parchment paper, pipe out small clouds separated from each other, and sprinkle as needed with cinnamon.
- Bake for 20 min, turn off the oven, and let rest for 5 minutes. Remove from oven.
- Sprinkle with a little more cinnamon, and serve with tea.
