The best cupcakes ever. If your coconut oil clumps up in the batter, I just melted it by stirring the bowl over a pot of hot water on the stove, double boiler style. Also can sub 1/4 cup coconut flour for 1/4 cup coco powder if you want chocolate cupcakes!
