- 2/3 cup millet flour (plus more for rolling)
- 1/2 cup sweet rice flour
- 1/4 cup tapioca starch
- 2 Tbsp. sugar (plus more for sprinkling)
- 1 tsp. xanthan gum
- 1/2 tsp. kosher salt
- 1 cup unsalted butter (cold, sliced into 16 tablespoons)
- 1 Tbsp. vanilla extract (Rodelle Organics)
- 15 Tbsp. ice water
- 1 Tbsp. heavy cream (for brushing on top)
- 2 lb. apples (and pears, peeled and cut off the core, then cut into ¼-inch thick slices, I used 3 small granny smith, 3 small bartlett pears)
- 5 Fuyu persimmons (large, 1¼lbs, tops removed, halved, then cut into ¼-inch thick slices)
- 1/4 cup corn starch
- 3/4 cup cane sugar
- 1 Tbsp. lemon juice
- 1 lemon
- 1 vanilla bean (Rodelle Gourmet, split and seeds scraped)
- 1/2 tsp. vanilla extract (Rodelle Organics)
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. kosher salt
