- 1 cucumber (unpeeled, julienned)
- 1 medium carrot (julienned or shaved)

I didn’t have ground pork but did have a pork loin which I put in the slow cooker with soy sauce and chicken broth before I went to work. I wished I had more lemon grass and will get extra next time. Left over meat is great for Pho

My family loves this recipe. We eat it weekly topped with shredded carrots, baby spinach, and cucmbers. I use chili garlic sauce to add spice and add either leeks or green onions. I don't add cilantro or lemongrass. I tried the lemongrass once and couldn't tell a big difference. My daughter's super picky but loves this, especially on sticky white rice.

It turned out great. Nice to mix in fresh herbs, I added basil, mint, peanuts, sprouts, sautéed mushrooms, sliced green beans, red and green bell peppers, steamed baby bok choy. This is a very versatile recipe. I suggest making it your own with fresh ingredients on hand.. Add sriracha to make it spicy.
