- 5 chillies (dried or semi dreid birds eye, *if you can’t find dried, or do your own, use 3 fresh chillies)
- 2 Tbsp. spring onion (roughly chopped)
- 2 coriander roots
- black vinegar
- 1 inch ginger (piece of peeled)
- 2 Tbsp. soy sauce
- 2 Tbsp. Chinese cooking wine
- 1/8 tsp. sesame oil
- 1 Tbsp. oil (a lightly flavoured olive oil or macadamia oil would be awesome)
- coconut sugar (optional)
- 1 1/2 cups mixed mushrooms (finely diced, shitake and cup works well, oyster and portobello would also be good)
- 1 cup green cabbage (finely shredded, then roughly chopped, wombok works well too)
- 2 Tbsp. water chestnuts (finely diced)
- 1/2 cup carrot (finely chopped)
- 1/4 cup coriander (finely chopped)
- 2 tsp. ginger (freshly grated)
- 1/3 cup spring onion (finely chopped)
- 1/2 tsp. mirin
- 1/2 tsp. soy sauce
- 3 drops sesame oil
- 60 dumpling wrappers
- 2 Tbsp. roasted peanuts
- 2 Tbsp. spring onion (sliced)
- 1 handful coriander leaves
