- almond flour (blanched superfine)
- oat flour
- baking powder
- sweet potato (orange cooked)
- milk (plant-based, I used and recommend canned lite coconut milk)
- pure maple syrup
- vanilla extract
- semi sweet chocolate chips (dairy-free)
- 5 Tbsp. sweet potato (cooked, mashed and cooled orange, do not use a white one, they are too dry)
- 1 1/4 cups blanched almond flour (superfine, must be superfine or your muffins will be dense)
- 1 cup oat flour (fine, I use Bob's Red Mill, see NOTES at bottom for grain-free)
- 2 1/2 tsp. baking powder
- 1/4 tsp. fine salt
- 3/4 cup lite coconut milk (room temperature canned, shaken first)
- 6 Tbsp. pure maple syrup
- 2 tsp. vanilla extract
- 6 Tbsp. dairy-free chocolate chips (mini semi-sweet, the minis spread more throughout the batter)
