- 1/2 cup rice vinegar
- 1 Tbsp. vegetable oil
- 1/4 cup white sugar
- 1 tsp. salt
- 1/4 cup soy sauce
- 2 cloves garlic (minced)
- 2 Tbsp. rice vinegar
- 2 Tbsp. sesame oil
- 2 Tbsp. olive oil
- 1 sweet potato (large, peeled and cut into thin slices)
- olive oil (to drizzle)
- salt (to taste)
- 2 cups pineapple (cut into cubes, rings or half moons)
- 1 Tbsp. coconut oil
- 1/2 cucumber (a medium, cut into thin half moons)
- 4 radishes (cut into thin half moons)
- 2 cups edamame (cooked through if frozen)
- 1 avocado (thinly sliced)
- sesame seeds
- green onions (thinly sliced)
- sriracha (/your favorite hot sauce)
