- 4 Tbsp. fat (friendly, to cook in butter, ghee, olive oil, tallow/lard etc)
- 1 medium onion (diced)
- 2 large carrots (peeled and diced)
- 2 small yellow potatoes (cubed)
- 4 cloves garlic (minced)
- 2 Tbsp. flour (Namaste GF, Blend, rice flour, or even cassava flour will work. If you want the soup thicker, or more like a stew, add 3 tbsp – the 2 tbsp leaves the soup smooth and creamy)
- 3 cups bone broth
- 1 cup coconut milk (or whole milk)
- 1 tsp. dried parsley
- 1/2 tsp. dried thyme
- 1/8 tsp. red pepper flakes (or to taste per your family’s heat preference, Optional - if you are preparing this for little guys, leave it out, and you can always add it to your bowl if you enjoy the heat)
- 2 cups chicken (leftover, or turkey, cubed or shredded)
- 1 cup peas (frozen organic)
- 1 cup corn (frozen organic)
- sea salt (/pepper to taste)
