Tried this dish with extra lean ground beef, quinoa (instead rice) and no lemon juice. Turned out amazing 🤗

In the end, this tasted great, but it took a lot longer to make than I anticipated. I do have some comments /changes. The rice takes way longer than 20 minutes to cook. I added more water and in the end (probably about 45 minutes), the rice was pretty much cooked. Next time I might cook the rice first, at very least partially. I did not use the full amount of tomato paste at the end as I didn’t have enough - I felt it came out fine. I drained the grease from the ground beef before adding the oil, onions, and garlic. I added some Parmesan cheese to the top of the casserole before throwing in the oven. The end result was tasty - I liked the spice from the cayenne pepper and the flavor from the lemon and mint. I might add cumin next time.
