Here in the Midwest you can get duck fat at your local Ace Hardware, in with the BBQ stuff. Excellent recipe. Worth the effort.

I dont know how easy it was to find duck fat for yall, but for me it was impossible. I used olive oil instead and it turned out good, but I bet the duck fat made it excellent!! Ill try again around Thanksgiving.

I replace the duck fat with olive oil and added 21 season herb mix. Still turned out crispy. will make again.
