I Love this sandwich. I’ve made it a handful of times. It’s light and refreshing. I really like to use fresh Roma tomatoes, nice ripe ones. Also, friendly tip, DO NOT be shy with that Lemon Basil Mayo, it’s so delicious and the more the better. Cook that tofu low and slow and the crispier the better, also, go over board with the seasoning on the tofu as it only enhances the flavor and doesn’t taste over board on this delish sando. Yummmmm
