    Pretty dang good! I did a couple tweaks though, subbed 1/3 of my paprika portion wirh smoked paprika and also made extra rub to inject into the meat with butter! Roasted 4# in just over an hour with potatoes, carrots, and onion

    This was an amazing recipe! I love recipes that don’t have several ingredients but can still be full of flavor! I did cover my loin in foil while it cooked and used the broiler at the end to darken the top a little (not much, I was scared I would dry it out). My meat was tender, juicy and perfectly seasoned! I did add some of my own seasonings as well..This is a recipe I will use over and over again! Thank you for sharing!

    I think it turned out good but may tweek it.
    It was yummy, but I added more spices like several others

    I noticed a lot of people adding to this recipe and I see why. It was okay but needs more seasoning. Also, it cooked may shorter than the recipe calls for so I recommend using a thermometer to ensure it does not over cook. I ended up putting extra garlic and salt. Overall not bad.

    Loved the simplicity of this recipe. I cooked it med-high for 10 min in a cast iron pan, turning to brown. Then baked at 375 for 20 min. Temp was perfect.

    Wrapped it in foil to keep in the moisture. Cooked to 145 and let it rest to 150. Very good!

    Great! Except that I overcooked it while waiting for everyone to get home. I sprayed my 9x13 dish with olive oil, added the meat, and seasoned it. At the end I added carrot, onion, and potato chunks. They were perfect but the meat was dried out. My bad...

    Just perfect! I put in two sliced apples and a big sliced onion about halfway through cooking (and extended cooking time, as suggested) and it was awesome!
