- 2 inches fresh ginger (piece, finely chopped, 2 heaping tablespoons)

- 6 1/2 cups low sodium chicken broth
- 1 Tbsp. fish sauce
- 1 tsp. Sriracha sauce
- 1 star anise (this soup will survive if you don’t have star anise at home or your market doesn’t carry it)
- 12 oz. udon noodles (cooked, sold in packages in the refrigerated section of the market along with other asian specialtialties. Weights per package vary by brand *)
- 3 handfuls collard greens (roughly chopped, stemmed, or other leafy greens)
- 3 eggs (such as Safest Choice pasteurized eggs)
- 2 scallions (white and light green parts, thinly sliced)
