This was really good and refreshing! I also added the additional recommended herbs :)

I love tzatziki sauce. The lightness that is so full of fresh herby flavors is very appealing. I never cared for chicken salad made with mayonnaise. This is a wonderful alternative for me. That I can customize the herbs is a great plus since I tend to throw whatever I have on hand into the mix.
This time around, I used cilantro, scallions, parsley and dill. I grated both the cucumber and the garlic. I actually zapped the garlic before grating for 30-45 seconds (making them warm). That seems to tame the sharpness of it - thank you, Cook's Country!
I boiled skinless, bone-in chicken breasts, but next time, I'll steam.
And yes, there will most certainly be a next time.
