- 25 curry leaves

- 3 tomatoes (ripe, peeled and roughly chopped)
- 50 mL cider vinegar
- 400 mL water
- 1 Tbsp. caster sugar

- 2 red peppers (small, cored and cut into 2cm dice)
- 400 grams sweet potato (net weight, peeled and cut into 2.5cm dice)
