- 6 yukon gold potatoes (peeled)
- 1 sweet potato (peeled)
- 2 cups half & half (fat free)
- 1/2 cup manchego cheese (3 month old, shredded)
- 1/2 cup manchego cheese (12 month old, grated)
- 1/2 cup smoked gouda (shredded)
- 1/2 tsp. rosemary (divided)
- 1 tsp. salt
- 1 tsp. pepper

- Peel all the potatoes.
- Slice thinly using a mandolin.
- Spray cooking spray on a baking dish (I used a tin foil pan)
