- 1 Tbsp. canola oil
- 1/8 tsp. sea salt
- 3 romaine lettuce leaves (cut in half)
- 2 slices millet (Udi's, and Chia Bread, toasted, and crushed)
- 1/4 cup unsweetened shredded coconut
- 1/4 tsp. sea salt
- 1/8 tsp. cayenne pepper
- 1 Tbsp. flat leaf parsley (finely chopped)
- 1 egg (lightly beaten)
- 1/4 cup canola oil
- 12 extra large shrimp (peeled & deveined)
- 1/2 fresh pineapple (small, cored and diced into small, 1/4" chunks)
- 1/2 jalapeno pepper (seeded, finely diced, about 1 1/2 tablespoons)
- 2 Tbsp. shallot (finely diced)
- 1 lime
