- 1/4 cup coconut cream (I used canned light coconut cream)
- 1 Tbsp. Thai red curry paste
- 1/3 cup smooth peanut butter
- 1/3 cup water
- 2 Tbsp. lime juice
- 1 Tbsp. tamari (or soy sauce if not gluten free)
- 1/2 Tbsp. coconut sugar (or sweetener of your choice)
- 1 garlic clove (finely grated or crushed)
- 1/2 Tbsp. fresh ginger (finely grated)
- 1/4 tsp. chilli flakes (optional)
- 1 carrot (peeled and grated)
- 1 spring onion (scallion, finely sliced)
- 1 handful coriander (cilantro, roughly chopped)

- 1 chilli (fresh, finely sliced, optional)
