This is absolutely delicious, company worthy!! I used a sharp knife to go around the eggplant after the first bake and scooped in out carefully with a grapefruit spoon

If you LOVE cheese, this is the dish for you! I added a scoop of ricotta cheese and a handful of mozzarella cheese. Filling is yummy, cheesy and very tasty! I will be making this again!
