- 1 tsp. minced garlic (finely)
- 14.5 oz. diced tomatoes
- organic tomatoes
- 1 Tbsp. fresh thyme leaves (chopped, other herbs such as oregano or basil could be used, but I would not use dried thyme)
- 4 eggs
- 2 Tbsp. grated Parmesan cheese (freshly, or more)
- 1 Tbsp. chopped fresh chives (optional, but the chives were great in this)
