- 1 1/2 lb. rump roast (boneless, trimmed, Note: the original recipe calls for a chuck roast, but I switched it up and it turned out great!)
- 1 Tbsp. extra-virgin olive oil
- 4 oz. fresh mushrooms (sliced)
- 1/2 sweet onion (1 large, sliced)
- 2 cloves garlic (chopped)
- 7.25 oz. organic chicken broth
- 4 oz. tomato sauce
- 2 Tbsp. tomato paste
- 2 tsp. italian seasoning (dried)
- 1/2 lb. carrots (peeled and cut into 1-inch chunks, I used baby carrots)
- 2 tsp. extra-virgin olive oil
- 2 tsp. fresh lemon juice
- 2 tsp. fresh parsley (chopped)
- 1/4 tsp. salt
