- 12 oz. chicken (precooked smoked, or turkey sausage, halved lengthwise and sliced 1/4 inch thick, you can substitute the same amount of Italian sausage – just cook and drain it)
- 2 cups elbow macaroni (uncooked)
- 8 oz. cream cheese (cubed and softened)
- 1 cup sliced olives
- 1 cup shredded mozzarella cheese
- 1 1/2 Tbsp. butter
- 1 1/2 Tbsp. flour
- 1 tsp. dried sage
- 1/4 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper (don’t be afraid of this! It won’t make it spicy, I promise)
- 1 1/2 cups milk
- 1 tomato (sliced thinly)
- 1/2 cup grated Parmesan cheese (freshly)
