- olive oil (for pot)
- 1/2 lb. pork sausage (Italian, removed from casings)
- 1 medium yellow onion (peeled and diced)
- 2 large carrots (peeled and diced)
- 1 stalk celery (diced)
- 3 garlic cloves (peeled and minced)
- 1 1/2 tsp. Italian seasoning (could use a mix of dried oregano, thyme, basil, and parsley)
- 1/4 tsp. crushed red pepper flakes
- 14.5 oz. diced tomatoes (undrained, could use Italian seasoned)
- 6 cups low sodium chicken broth
- 1 cup brown lentils (rinsed and drained)
- 1 large potato (8-10 ounces, chopped, may substitute sweet potato or use a combination; no need to peel)
- 2 cups chopped kale (lightly packed, tough ribs removed; may substitute greens of choice)
- 1 tsp. kosher salt (and a few good turns of the pepper mill)
- 1/2 Tbsp. balsamic vinegar
- freshly grated Parmesan cheese (For serving:)
