- 4 Tbsp. unsalted butter (or 1/8 lb)
- 2 sprigs fresh rosemary

- 1 1/2 cups fennel (fresh, finely chopped)
- 1 1/2 cups onions (finely chopped)
- 2 Tbsp. fresh thyme leaves
- 3 cloves garlic (thinly sliced)

- 1/2 cup dry white wine (no need to expensive)
