- 1/2 tsp. paprika (dried)
- 1/4 tsp. garlic salt
- 2 Tbsp. olive oil
- 1 brown onion (peeled and sliced)
- 2 cloves garlic (peeled and minced)
- 1/2 tsp. dried oregano
- 1 tsp. paprika
- 1 cup sun dried tomatoes (I like the bright red one from the deli counter)
- 1 red bell pepper (de-seeded and sliced)
- 1/3 cup white wine
- 1 cup chicken stock (use bouillon for gluten free)
- 1 pinch salt (and pepper)
- 1/3 cup heavy cream (double)
- 1/2 cup Parmesan cheese (grated)
- 3 cups baby spinach (fresh)
- 1 Tbsp. chopped parsley

What a great recipe to spice up a chicken dinner. My family loved it. I made 6 chicken breast because I had a feeling either my husband or son would want more. I was spot on. I will definitely add this to the rotation. It's definitely a winner.

Great.. didn’t have fresh parsley so I used dried flakes but it came out slamming...(delicious) thanks for sharing the recipe.

Wow. Really good. Next time I will make more sauce (as I served with whole wheat penne pasta). This is a keeper for sure!!
