- 32 oz. lower sodium chicken broth (fat-free)
- 7 oz. roasted red bell peppers (rinsed, drained, and cut into 1/2-inch pieces)
- 14 oz. diced tomatoes with juice (added,, I used no salt tomatoes)
- 1 lb. boneless, skinless chicken thighs (or breasts, cut into 1-inch pieces)
- 3 garlic cloves (minced)
- 1/2 tsp. fresh rosemary (chopped, I used 1 tsp Herbes de Provence)
- 6 oz. baby spinach (fresh)
- 8 tsp. fresh Parmesan cheese (grated)
