  • 1 pound cherry tomatoes
  • 4 ounces pimento stuffed green olives
  • 1/4 cup olive oil
  • 1 lemon (juiced)
  • 4 chicken breasts (cut into 3 pieces)
  • fresh basil leaves (to garnish)
  • rice (to serve)

    Directions

    1. Preheat oven to 350°F. Toss tomatoes and olives with 2 tbsp oil and lemon juice. Set aside.
    2. Heat remaining oil in a frying pan. Season chicken then sauté for 2-3 mins per side, or until golden. Transfer to a baking dish. Pour tomato mixture over top, toss well and season. Bake for 15-20 mins, turning once, until chicken is cooked through. Top with basil leaves and serve with rice.
