  • 1/2 baguette (quartered, thinly sliced)
  • 2 tablespoons oil
  • 1 tablespoon chopped fresh thyme
  • 3 ounces baby spinach leaves
  • 1 1/2 cups loosely packed fresh basil leaves
  • 4 tomatoes (cut into wedges)
  • 3/4 cup pitted kalamata olives
  • 1 red onion (thinly sliced)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

    Directions

    1. Preheat the oven to 400°F. Place bread on a large baking pan. Drizzle with oil and thyme; toss well to coat. Arrange bread in a single layer on pan.
    2. Bake for 8-10 mins until golden and crisp. Set aside to cool.
    3. Toss spinach, basil, tomatoes, olives, onion and bread in a large bowl. For the dressing, whisk together all ingredients in a small bowl. Season to taste.
    4. Serve salad drizzled with dressing.
