- 1 small carrot (finely grated)
- 1 onion (small, finely chopped)
- 1 sprig fresh rosemary
- 2 kaffir lime leaves
- 1 bay leaf
- 1 lemongrass (stem, bashed with a rolling pin to release flavours)
- 1 star anise
- 2 cms fresh ginger (fine grated)
- 1/2 lime
- juice (a full lime)
- 100 grams baby corn (halved length ways)
- 1 Tbsp. mirin (sweet Japanese rice wine)
- 1 seeds (red chilli, left in and sliced into circles)
- 1/2 tsp. turmeric
- 150 grams noodles (straight to wok medium)
- 75 grams edamame beans
- 1 tsp. light soy sauce
- black pepper
- sea salt
- 20 grams fresh coriander (roughly chopped)
