- 1 white onion
- 1/4 cup curry paste
- 1 Tbsp. Thai chili paste
- 4 lemon grass (stocks minced or left in 2 inch sticks, if you cant find any.. still make this!)
- 5 1/4 inches ginger (thick slices of, galangal is best)
- 1 cup shiitake mushrooms
- 1 tsp. turmeric powder
- 3 cans coconut milk (natural, full fat is best :)
- 1 1/2 cups water (or vegetable stock)
- 6 carrots (copped bite sized)
- 4 potatoes
- 4 kaffir lime leaves
- 1 cup peas
- 1/4 lemon juice (squeezed)
- 1 cup cilantro
