  • 2 pounds sugar pumpkin (peeled and cut into 1/2-inch thickslices)
  • 1 1/2 cups sugar
  • 2/3 cup chopped walnuts (coarsely)

    Directions

    1. Preheat oven to 350°F. Place pumpkin in a deep, flameproof baking dish. Cover with sugar. Cook on high heat for 2-3 mins, until sugar starts to melt and caramelize. Cover with foil.
    2. Bake for 45 mins. Remove foil and bake for 20 mins. Transfer to a serving plate to cool. Sprinkle with walnuts and serve.
