- 1/2 pkg. Honeysuckle White Turkey Breast Tenderloins (or approximately 1.25 lbs leftover whole turkey)
- 4 Tbsp. olive oil
- 1/2 white onion (diced)
- 1/2 red bell pepper (diced)
- 2 cloves garlic (minced)
- 10 oz. frozen spinach (thawed and well-drained)
- 3 eggs
- 1/2 cup low fat milk
- 1/2 tsp. salt
- 1/4 tsp. coarse ground black pepper
- 1 cup swiss cheese (grated)
- 1 pie crust (9-inch, unbaked)

Directions
- Preheat oven to 350°F.
- Heat 2 tablespoons olive oil in a skillet.
- Sauté turkey for 10 minutes on each side, or until center is no longer pink. Cool. Transfer to cutting board and slice with the grain of turkey into bite-size pieces.
