- 2 tsp. olive oil
- 1 onion (finely diced)
- 1 Tbsp. minced garlic (finely)
- 1 1/2 lb. lean ground turkey (use ground turkey with less than 10% fat for South Beach Diet)
- 1/4 cup basil pesto (I used my homemade Basil Pesto with Lemon, but good quality purchased pesto will be fine.)
- 2 Tbsp. grated Parmesan cheese (finely)
- 1/2 tsp. salt
- 3/4 cup whole wheat breadcrumbs (100%, make in the food processor from 100% whole wheat bread if you can't find whole wheat breadcrumbs)
- 1/4 cup marinara sauce (low-sugar, I used Classico tomato and basil sauce)
- 2 tsp. balsamic vinegar

Very easy to make, took roughly 1:30 to reach correct temp. The tomato sauce with balsamic vinegar was a bit bland, so I added some balsamic vinegar dressing instead, gave the sauce some character. I enjoyed it very much.

This recipe is fantastic! It also heats up well the next day. I am not a red meat eater, so this is a perfect alternative. My husband and I both love it.
