- 3/4 cup quinoa (uncooked, red, white or tri-color blend)
- 4 bell peppers (large, preferably red or orange)
- 1 Tbsp. olive oil (1 cup, 133 grams)
- chopped onion
- 2 large garlic cloves (finely chopped)
- 12 oz. lean ground turkey
- 2 tsp. ground cumin
- 1 tsp. fresh ginger (finely grated, I use the organic jarred puree)
- 3 sea salt (or good pinches of kosher)
- 1 pinch ground black pepper
- 14 oz. petite diced tomatoes ( can of, not drained)
- 2 Tbsp. dried currants
- 4 oz. feta cheese (crumbled or cubed very small)
- 1/4 cup chopped parsley (finely)
