- 1/2 cup chopped onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. dried oregano
- 1/2 tsp. paprika
- 1 1/2 tsp. cumin
- 8 oz. tomato sauce
- 1/4 cup low sodium chicken broth (or water)
- 15 oz. pinto beans (can black or, rinsed and drained)
- 2 cups cooked brown rice (see note above)
- 1 Tbsp. fresh lime juice
- chopped cilantro (to taste)
- 2 cups shredded cheddar (and/or Monterey Jack cheese)
- 8 flour tortillas (burrito-sized, 10-inch, white or whole wheat)
