- 1 cup Mexican cheese (reduced fat shredded, I used Weight Watchers)
- nonstick cooking spray
- 2 garlic cloves (minced)
- 2 Tbsp. chipotle chiles in adobo sauce
- 1 1/2 cups tomato sauce
- 1/2 tsp. chili powder (chipotle)
- 1/2 tsp. ground cumin
- 3/4 cup fat-free chicken broth
- kosher salt

Best enchilada sauce I've had. Love the heat from the Chipotle chili powder. I made the sauce in advance and let it rest for over an hour. So good.

Simple and good one dish meal for a weeknight. Everyone in my family voted the recipe a keeper!
I did not modify the ingredients, but I did streamline the directions some -so it did not take me quite as long as stated to prepare.
