Directions
- Peel sweet potatoes and onion and dice into 1/2 inch pieces.
- Heat a large skillet over medium-high heat and add olive oil.
- Add sweet potatoes and onions to the skillet with oil and season with a pinch of salt.

Tasted good, but don't try and fry the sweet potatoes in a skillet. That's just stupid. They take forever and fall apart long before they're done. Just par-boil and roast them.
