  • 1 pound lean ground turkey
  • 1 garlic (minced)
  • 1/4 onion (minced)
  • 1 tablespoon chopped fresh cilantro (or parsley)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin powder

  • 3 red bell peppers (large sweet, washed)

  • 1/4 cup tomato sauce

    This was surprisingly good! I used shredded chicken instead of ground turkey. I cooked down crushed tomatoes from a can instead of tomato paste because that’s all I had. I also added corn to the mix and poured Stokes Green Chili sauce over the peppers before baking. They were very good and only 3 WW points. I will definitely make this again!!

    This was pretty good. I personally like my stuffed bell peppers to have more tomato flavor. If I made these again I would add tomato sauce on top of the bell peppers after they were stuffed and then top it with cheese. I also cooked my rice in chicken broth and that gave it more flavor as well. This recipe was good, but with a couple of tweaks it would be great!

    This is a very yummy recipe. I used orange and yellow peppers because they were on sale and it was so tasty that my picky eaters (even the veggie hater) ate it up! I also used cauliflower rice instead of brown rice to keep it low carb and pepper jack cheese on half the peppers just because I needed to use it up. Next time I’d probably use JUST pepper jack cheese as I thought it complimented the other flavors better than the cheddar cheese.

    Turned out great! Very juicy! Very flavorful! My hubby decided to add some extra sauce on top of his mixed with some chipotle tobasco. I tried it and had to put it on mine too! Gave it a little heat but didn’t mask the other flavors. I won’t say it’s not a little time consuming, but i did prep earlier in the day so i was able to just throw everything together more or less. We will be having this again for sure!

    My husband usually does not care for stuffed peppers because he said it tastes like eating hot food out of a hard pepper. This recipe was a game changer. Adding the chicken broth steams the peppers while in the oven and made it so tender. I did add onion powder in addition to the other seasonings. My husband liked them so much he requested the same thing tonight for dinner.

    I really liked this recipe and I normally find turkey bland. It was super easy and tasty especially if you add some oregano. I doubled the quantity and used 2 lbs of turkey, one whole onion and 4 peppers. It turned out to be a good amount for 2 or 3 people. The leftover meat and rice I baked in a separate lided dish with cheese and it'll be great for lunch (and probably more) tomorrow. Nice and uncomplicated plus its pretty healthy

    I used spicy Italian turkey sausage (without the casing) to add more flavor and added more vegetables. The recipe turned out well but I may use bread crumbs on top instead of cheese for texture.

    Amazing. I made two modifications using cauliflower rice and green peppers (which we had in the fridge). My family loves the recipe and my mother-in-law, who is 97 and not easy to please, really enjoyed it tonight. She raved about the texture of the green peppers....easy to eat. Thank you!

    delicious! I used extra lean ground beef and basmati rice since that was what I had on hand. Great recipe, not too much moisture.
