One day, someone came along and designed an attractive casserole that also doubles as a serving dish. Then it became the name of the recipe, too…
A lot of people don’t realize there’s a difference between a cupcake pan and a muffin pan. It turns out that the indentations in an ordinary muffin pan are deeper and the sides are straighter than the indentions in a cupcake pan. But unless you’re a pastry chef, you probably bake muffins and cupcakes in the same pan. So yes, you’re officially repurposing your muffin or cupcake pan. And here’s another repurposing tip: turkey sausage egg cups is an egg, sausage and cheese recipe that you bake in a muffin pan (or a cupcake pan! Sorry if this is confusing).
The trick to making this recipe is first lining the muffin indentations with slices of bread. And rather than slicing and cooking sausage links, we suggest using Jimmy Dean® Turkey Sausage Crumbles, which are ready-to-eat pieces of premium turkey sausage. But you can use links, too. Just chop them up really good.
Waking up to these mini sausage and egg cups are a delightful way to start any day.
Ingredients
- 1 1/2 cups Jimmy Dean® Turkey Sausage Crumbles
- 3 eggs
- 1 Tbsp. milk
- 1 cup shredded cheddar cheese
- 2 Tbsp. butter (melted)
- 6 slices white bread
Directions
- Preheat oven to 400°F.
- Brush muffin cups with melted butter.
- Beat eggs and milk in a medium bowl; stir in sausage and cheese.
- Cut a slit in the corner of each slice of bread from the middle of the slice to the edge and lightly press into muffin cup. Overlapping the pieces where you cut the slit so it fits into the cup without tearing. Repeat with remaining bread.
- Pour sausage egg mixture carefully into muffin cups. Bake for 15 minutes or until eggs are set and bread is golden brown. Remove from muffin tins to serve.
