Have made this dish many times. It’s a go to for family weeknights and makes great leftovers as is or chopped to have with pasta. I throw the peppers in cut side down while cooking the filling to soften.

I ended up using a loose turkey sausage and was unsure at first (as it smelled very much like a Mexican inspired meal) but these turned out to be absolutely fabulous! My husband is requesting them again.
