- 1 cup cooked quinoa (about 1/3 cup before cooking)
- 1 Tbsp. olive oil
- 1 yellow onion (peeled and diced)
- 3 cloves garlic (minced)
- 1 lb. ground turkey
- 3 Tbsp. chili powder
- 2 tsp. cumin
- 3/4 tsp. salt
- 1/2 tsp. black pepper
- 3 Tbsp. tomato paste
- 3 chipotle peppers (in adobo sauce ,minced ,or 2 teaspoons of smoked paprika or chipotle powder)
- 28 oz. tomatoes (can whole peeled,blend until smooth with immersion blender or mash with a potato masher before using ,about a 796 millilitre can)
- 3 cups lower sodium chicken broth (2 to ,depending on how thick you want your chili to be)
- 2 bell peppers (cut into bite-sized chunks)
- 1 sweet potato (peeled and cut into small cubes)
- 19 oz. black beans (can ,of unsalted ,or no salt added ,rinsed and drained ,about 2 cups)
- 1 cup frozen corn (or rinsed & drained canned corn)
