Well you have to admit that saying Polpettone is a lot more fun that saying Meatloaf. And seeing as this recipe is not an ordinary meatloaf it deserves the title “Polpettone”!

Ingredients

  • 2 pounds ground turkey
  • 2 slices bread (soft fresh, crumbled)
  • 2 egg yolks
  • 4 tablespoons green onion (thinly sliced)
  • 1 tablespoon sage leaves (chopped fresh)
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon grated lemon zest
  • 6 ounces mozzarella cheese (whole-milk, cut into 1 inch cubes)
  • 1 jar marinara (your favorite, or see recipe below for easy Homemade Marinara)
  • 1 bag spinach (baby leaf)

    Directions

    1. Pre-Heat Oven to 350°
    2. Put the turkey in a bowl. Add the bread crumbs, egg yolks, onion, sage, Worchester, and lemon zest and mix them in by hand very gently. Do not over mix the turkey mixture; the less you handle it the lighter it is. Add the cubed mozzarella, salt and pepper and again, with your hand, gently combine it into the mixture.
    3. Form a “loaf” with the turkey mixture on a baking sheet or a 13 x 9” cake pan. If using the cake pan do not spread it out to fit the pan, again form a “loaf” with it.
