This turned out perfectly! I followed the recipe to a T and used a can of cut tomatoes with green chilis, cooked those on the stove top w/salt + pepper & basil, then topped the meatloaf after 30 minutes. Cooked 30 more minutes and it was perfect! Definitely cooking this again.
