- 1 turkey neck (optional, if saved)
- 1 smoked ham hock
- 1 carrot (cut into 2-inch pieces)
- 3 scallions (white parts only, cut into 1-inch pieces)
- 1 inch ginger (piece, peeled)
- 5 qt. cold water
- 3 qt. turkey stock
- 1 1/2 cups long-grain white rice
- 1/2 cup wild rice
- 4 cups water (divided, plus more as needed)
- 3/4 lb. sunchokes (cut into ½-inch pieces, 4 cups cut sunchokes)
- 3/4 lb. Brussels sprouts (outer leaves removed and quartered, 3 cups cut Brussels sprouts)
- 2 Tbsp. canola oil (divided)
- kosher salt (to taste)
- 4 medium carrots (roughly chopped, 2 cups chopped carrots)
- 3 celery stalks (roughly chopped, 2 cups chopped celery)
- 1 garlic clove (minced, 1 tablespoon minced garlic)
- 1 inch ginger (piece, minced, 1 teaspoon minced ginger)
- 4 cups turkey (roasted and shredded)
- 1/2 cup fried shallots
- 1 cup cilantro leaves (some stems are OK)
- 1/2 cup scallions (thinly sliced, green and white parts)
- white peppercorns (Freshly ground)
