- 1 1/2 cups cheddar cheese (grated)
- 1 Tbsp. jalapeno peppers (Lacto-Fermented, optional,, for garnish)
- cilantro (not optional,, for garnish)
- enchilada sauce
- 2 Tbsp. oil
- 2 cloves garlic (minced)
- 2 chipotle peppers in adobo sauce (chopped)
- 1 1/2 cups tomato sauce
- 3/4 cup chicken stock
- 1/2 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. chipotle pepper (powder)
- 1 pinch black pepper
