- 2 eggs (beaten)

- 4 celery (ribs, from the heart with leafy tops, finely chopped)

- 1 golden delicious apple (or Gala, chopped)
- 110 grams button mushrooms (small, wiped clean and very thinly sliced)
- 2 lemons
- 6 Tbsp. olive oil (extra-virign, eyeball the amount)
- 4 slices brioche (or challah, toasted)
- 3 Tbsp. gravy
- 4 sprigs fresh thyme leaves (stripped and finely chopped)
- 320 mL apple cider (cloudy)
- 480 mL turkey stock (or chicken stock)
- 1 Tbsp. worcestershire sauce
