- 2 slices whole wheat sandwich bread (or high-quality white, torn into quarters)
- 1/4 cup whole milk
- 2 lb. ground turkey (I recommend 93% lean)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 Tbsp. vegetable oil
- 3 onions (diced, about 3 generous cups)
- 1/4 cup chili powder
- 1/4 cup tomato paste
- 6 garlic cloves (minced)
- 1 Tbsp. ground cumin
- 1 tsp. dried oregano
- 1/2 tsp. red pepper flakes (or 1/4 teaspoon for milder heat)
- 15 oz. tomato sauce (can)
- 30 oz. red kidney beans (dark, drained and rinsed, or 3 3/4 cups dried beans, soaked and cooked until softened)
- 28 oz. diced tomatoes (I use fire-roasted for a slight charred flavor)
- 1 1/2 cups beef broth (you can use chicken broth if you prefer)
- 3 Tbsp. soy sauce
- 1 Tbsp. brown sugar
- 2 tsp. chipotle chiles in adobo (sauce ,minced canned, I usually just add 1 teaspoon of the adobo sauce, optional)
- cheddar cheese (Shredded or cubed, optional)
- jalapeños (Sliced, optional)
- green onions (Diced, including green parts, optional)
- sour cream (optional)
- black olives (optional)

Delicious! I used this as a base recipe and tweaked a little, it is good as is I just wanted to mix it up. Added 1 poblano, 1 jalapeno, and 1 green pepper for some heat and variety. It had a kick, but the pot I sent in with my boyfriend to work satisfied a group of guys with varying tolerances for heat. Also used 15oz each of black and red beans instead of kidney beans.
The bread and milk thing seemed weird, but it is truly the key to keeping the turkey moist in the slow cooker! I won't make chili without it now.
